I'm sorry to hear about this issue. To clarify, what version of Uninstalr were you using? What unwanted programs were you uninstalling? Can you remember how those personal files were named that were on your desktop?
Uninstalr lists every file it would remove before the uninstallation process starts. Did you review this before starting the uninstallation? Uninstalr also urges you to create a backup of all your data before uninstlling anything. Did you do this? It also attempts to create a System Restore Point, if that succeeded in your system, you might want to try to restore it.
To answer your question: No, Uninstalr doesn't create any log files. It shows user the paths before uninstallation, so user can see them and review them. At this stage, you could also save them if you want to create such log file, but there is no automatic log file creation feature.
